Bacon & Brussels Sprout Linguine
- Linguine (or any pasta to your liking)
- Sea salt
- Freshly ground black pepper
- 6 Slices thick-cut bacon
- 1 Medium bulb onion-chopped
- 1 Small Brussels sprouts/cabbage- diced
- 2 Clove garlic- minced
- 1/3 Cup dry white wine
- Cheese- grated
Cook pasta in boiling salted water using your RT/105 casserole according to package directions; reserve 1 cup pasta water. Drain.
Sauté bacon and onion in your casserole over medium heat, stirring occasionally, until bacon is browned and onions are caramelized, 8 to 10 minutes. Add Brussels sprouts and garlic and sauté, stirring, until leaves are bright green, for 2 minutes.
Stir in wine, scraping brown bits forming at the base of the casserole; add pasta, grated cheese, and reserved pasta water, and stir until the cheese is melted and pasta is creamy and well coated. Season with salt and pepper.
Ready to serve.
